Apple Crisp Parfait
(makes 9 servings)
Ingredients
3 cups peeled and sliced apples (about 3 medium apples)
1/3 cup old fashioned oats
3 tbsp brown sugar (or the equivalent in artificial sweetener)
2 tbsp water
1 tsp cinnamon
4 oz fat-free vanilla yogurt, sweetened with artificial sweetener
¼ tsp cinnamon
1/8 tsp group nutmeg
¾ cup fat-free whipped topping
Directions
1. Mix apples, oats, brown sugar, water, and cinnamon.
2. Pour apple mixture in a one-quart microwave-safe bowl.
3. Cover with wax paper and microwave on high for 5 to 7 minutes, rotating ¼ turn halfway through cooking time.
4. Depending on thickness of fruit, cooking time may be longer.
