Healthy cauliflower mashed potatoes
(makes 4 servings)
Ingredients
1 head cauliflower (1 pound)
1 clove garlic
1 leek, white only, split in 4 pieces and rinsed
¼ tsp. salt
1/8 tsp. white pepper
2 Tbs. light butter-canola blend
Directions
1. Break or cut up the cauliflower into florets and cut up the stem into 1- inch pieces.
2. Steam the cauliflower, garlic and leek 20 to 30 minutes or until very tender.
3. While still hot, place the mixture in a food processor and process until it resembles mashed potatoes. Add a little water if the mixture seems too dry.
4. Season the mixture with salt and white pepper. Stir in the butter blend to round out the flavor and texture.
