My favorite way is a Kale smoothie- serves 2 generously, might not be low on cals as in the article, but is a great way to eat kale (my husband who usually doesn’t go for green food actually likes this)
2 cups kale (or baby spinach)
1/2 cup coconut water
1/2 cup vanilla almond, coconut (or any) milk
1 frozen banana (one that was too old to eat and frozen works great)
2 tbs almond or peanut butter
2 tsp vanilla extract
1 cup ice
1/2 -1 cup Greek yogurt
Put it all in a blender
